I made a punchy rice wine vinegar and tahini dressing to liven up a lentil, grated carrot and spinach salad. Topped with avocado, cucumber, wasabi peas and toasted nori ☺️ 3-4 serves vegetables, plant protein and healthy fat.
This morning’s buckwheat and pear Bircher. Bircher or porridge tend to be my go-to breakfasts so I change up the grains, fruit, nuts and seeds for variety and a larger array of vitamins and minerals. While having the same healthy breakfast everyday is an e cells to habit, adding variety is key to get all the micronutrients you need through the course of your week.
Something I see often in my practice is All Or Nothing thinking. This is self-defeating on many levels... It puts unrealistic expectations on yourself, sets you up for some harsh self-criticism and prevents you from moving forward with your health. Don’t have time for a 30 minute run? Go for a 10 minute walk. Not meditating because you are meant to meditate for 20 minutes? 5 minutes is better than nothing! Progress is better than perfection and don’t you forget it. ❤️
And the spinach crepes with the filing from the previous post. Writing this recipe down, it’s a keeper 👍🏻😊
Sautéed mushrooms, kale and zucchini ready to be mixed through herbed ricotta with pumpkin seeds. This is the second time in 3 weeks I have put this into spinach crepes because it’s freaking delicious and so easy ☺️

School holidays!!!! I love having all my little ones home and not having to race out the door each morning. But it does mean being on top of my snack game... I blended 1/3c frozen berries, 1/2c frozen yoghurt (just plain yoghurt in an ice cube tray), 1/2c plain yoghurt and 1tsp chia seeds (essential fatty acids!) for after lunch today. You can do this with any frozen fruit and in Summer I was freezing mango cheeks for this.
I was talking about healthier alternatives to cheese platters with a client today and then this gorgeous photo and recipe by @vanillaandbean pops up on my feed. I love the addition of vegetables, the pesto-swirled dip and how inviting it looks. So easy to #eatmoreplants when they are presented like this. ☺️
This past week has been FULL ON. A lot of exciting things happening, some really focused clients making beautiful changes, last week of school term, deadlines... Tonight, I’m trying to get ahead a little in the food prep game. A big tray of vegetables are going into roast so I’ll have some spare for lunches tomorrow. Those herbs next to the veg are the ends of bunches of dill and parsley. I’ll mix them through ricotta and stuff it under the skin of a chicken before roasting to a deep golden brown. Super easy and delicious.
I am in love with these tea lattes from @rabbitholetea ❤️ The phytochemicals in tea can have positive effects on our health and the ritual of tea is so nurturing. Rabbit Hole Tea is running a tea latte workshop this Saturday - I can’t make it but it would be amazing 😉 (photo credit @rabbitholetea)
The first goals to fall by the wayside when we are busy are the health ones. I know that I move less and sleep less when I have a lot on my plate. I prioritize work because I have work deadlines. So I’m ticking something off my bucket list and giving myself a goal with a deadline! In July, I am hiking the highest mountain in the UK and have locked the weekly training in my diary. Committed and so excited!!!! ☺️
Thank you to the @thetradingcircle for the opportunity to share my knowledge as a mentor to the refugees involved in Four Brave Women. It is an enriching experience and I am so proud of everyone involved. We open this weekend and I am beyond excited 😊 Interestingly, you are more inclined to live longer if you have strong ties to your community and feel “useful” in older age.
